Tomatoes sit right on the borderline. Modern tomato varieties are often less acidic than heritage types, which means water bath canning alone may not be safe. The standard recommendation: always add 2 tablespoons of lemon juice per litre jar to bring the pH below 4.6, then water bath process. Without the added acid, you'd need a pressure canner.
